If you want to maximize the flavor of your burgers, steak, bacon, eggs, and waffles, then electric griddles could be the way to go. The best electric griddles will retain the food's juiciness and succulence, yet in the comfort of your own kitchen, or in fact anywhere where there is a working plug socket. Unlike outdoor barbeques, they offer you an easy cleanup. Unlike indoor stovetop cooking or working with a toaster oven & indoor grills you aren't chained to just one location. Unlike frying or deep-frying, you don't need a lot of cooking oil to get the job done.
An electric griddle is essentially a flat cooking surface made from stainless steel, chrome steel, or aluminum, and can be coated with ceramic or teflon. It simply plugs into the wall, thus freeing up your stovetop for other foods. Another advantage is that they're totally flat, meaning that your food is more likely to be cooked through, consistently.
Your electric griddle can be used to cook breakfast, lunch, or dinner, and allow you to replicate the kind of cooking you see in diners all over the country. They will usually come with their own warming trays and drip trays; some will also have spatulas and tongs, so you can cook your food exactly the way you want it, in a way that is healthy and tasty for the whole family or a group of guests.

Features To Consider With Electric Griddles
Size
An electric griddler will be discerning about what size of grill space he or she will need to cook the best food possible. You can purchase one which can vary from 12" to 72" wide, so knowing what will work best in your situation is vital. The size of the hood is a factor that needs to be borne in mind. It's all very well to cook food that people will love and have plenty of grill space in which to do it. However, you need to make sure that you buy a hood that will correspond to the griddle in question, allowing more than enough space to cover it entirely. If, after reading the reviews, you want to go for a 36" griddle, you're going to need a 48" hood, to allow 7 inches either side of it. Another of many factors is the kind of menu you have both the desire and ability to cook on a regular basis. With a larger griddle, you can devote one half of it to thick steaks and other meats, while the other half can be devoted to lighter breakfast items like pancakes and eggs. This is especially important if you're thinking of using this griddle for commercial purposes; in a small restaurant or cafe.
Cooking Surface
Whether a pancake griddle or griddle electric, the best electric griddles will have one feature in common; an excellent cooking surface. It used to be that griddles were made of steel; however, increasingly chrome griddles of varying substances will ensure that your pancakes and eggs smoothly slide into your spatula, thus minimizing the mess of cooking, and maximizing the ease. Cast iron has traditionally been very popular, due to the high durability you get with it, although it can be quite heavy. Ceramic glass is a newer innovation, and you will find it excellent at channeling heat into the food, as well as being a naturally nonstick griddle. However, you'll need a specially designed scraper so as to reduce the possibility of scratching it.
Aside from the substance of the surface, pay close attention to the design. For instance, plates called 'ribbed plates' will come with small grooves, giving you that chargrill sear effect which makes you steaks look extra appetizing. This isn't quite as useful for eggs, so a griddle without grooves might be better. Either that or a combination griddle which combines both a ribbed and a flat plate, for added convenience and versatility.
Drip Tray
A drip tray is an essential part of an electric griddle. It can be as thin as an inch wide but must parallel the plate, so could have a 22-inch girth and be deep enough to store all those messy juices and grease which will pour out from your burgers and tenderized steaks. Such liquids go through the drip pan and into a grease tray beneath it. It is best cleaned every few four or five times of being used because it is a fire hazard if left for too long. Some form of scraper or even putty knife can be used to clear all remaining grease and detritus. Most modern drip trays can be put in the dishwasher, in order to bring it back up to maximum efficiency and cleanliness.
Efficiency
It is debatable whether an electric griddle is more cost-effective and responsive than a gas griddle; it could depend on where you live. However, electric griddles have their heating elements integrated into the griddle plate, so there is no need to depend on outside sources of power other than through the main plug socket. You also don't have to worry about an exhaust system, as you might do with a gas-powered griddle, or for that matter, a stove top. An electric griddle is also more eco friendly, tends to be cheaper than a stove top, and has the great benefit of being portable, so can be used anywhere where there is a plug socket, not just in your kitchen. You can even take it on vacation.

Durability
If you intend to be cooking a significant amount of frozen meat and fish, then you may be best served by a thicker cooking plate. However, if not then a thinner plate should do. It could depend on whether you intend to be using it for breakfast, lunch or dinner, how often, and domestically or commercially. The general rule can be seen by the following:
- Standard: 1/2" thick griddle plate
- Medium: 3/4" thick griddle plate
- Heavy: 1" thick plate
There are specialist kind of griddle, eg. Teppanyaki models, that don't necessarily follow this chart, due to the structure of the heating elements, but these are the exceptions to the rule. Due to its flat surface, a teppan retains more juice on the cooking top in order to make the food retain great succulence and flavor.
Maintenance
It is imperative to purge even the best electric griddle from fats, juices and other food debris, to stop it hardening into a thick and resilient layer which may carbonize and become extremely hard to remove. If this happens then it will reduce the effectiveness of your griddle's heating capabilities and may even alter the food's natural flavor. In order to do this, you should get a specifically designed grill scraper so as not to damage the surface material of your griddle. If you're beyond that point, consider using a grill brick while the surface is still warm, to prise off ground-in dirt. Your griddle's waste drawer should be washed thoroughly every few uses, being put in the dishwasher if it is fully removable. Most griddles are dishwasher friendly, once the main heating unit detached. It is a good idea to do this every so often; your dishwasher can reach places that manual washing can't.
Electric Griddle FAQ
Q: What are electric griddles?
In a nutshell, an electric griddle is a variant of the griddle. A griddle per se is simply a flat cooking surface with a heat applied underneath. It can be a piece of cookware, eg. a cast iron griddle that depends on a burner; it can be integrated into a range. Or it can be an electric griddle that goes on your counter, separate to your stovetop. Griddles are ideal for entertaining, due to their large surface area. It doesn't have sides, as does a skillet, which makes it easier for you to flip food; while its open design doesn't trap in moisture, thus enabling you to make crispy hash browns.
Q: Are electric griddles safe?
The advantages of having a drip tray which collects all the excess juices and fat, makes cooking by electric griddle a healthy option. The only downside might be the substance of the grill area. If it's Teflon then the chemicals that can be dispersed into your food over time, might not be the healthiest. However, unless you're using it very regularly, it's unlikely to have a significant impact on health. Increasingly, manufacturers of electric griddles are guaranteeing that their cooking surfaces are made from PFOA and PTFE free substances. Stainless steel and cast iron are all healthier options for the surface of your griddle; however, you'll need a little more oil and patience because they likely won't be so efficient at being nonstick.
Q: What can I cook on an electric griddle?
It is hard to give a definitive list of what you can cook on an electric griddle. The following are just some suggestions:
- Grilled Cheese and other toasted sandwiches
- Hamburgers
- Steaks
- Pork Chops
- Pancakes
- Pikelets
- Bacon
- Sausage
- Salmon
- Kabobs
- Bruschetta
- Hash Browns
- Eggs
- Omelets
- Toast
You can pretty much cook anything that you would ordinarily cook using a traditional outdoor grill or indoor frying plan. However, you can get the best of both worlds, ie. great grilled taste, minus excess grease and fat.
Q: Can I put an aluminum foil on an electric griddle?
It is possible to put aluminum foil on your griddle to make the cleanup operation that much easier, or to transfer the cooked food to another area. However, unlike with fried eggs, you might want your burgers, steaks, or chicken to have that seared, grilled look, rather than just being cooked in a more insulated way. These days it's rare to find a griddle without a warming tray, so you should be able to do without extra foil. The increasing effectiveness of non-stick coating also means that you don't really need to worry about scraping and scratching the main surface area of your griddle.
Q: Is ceramic griddle better?
Ceramic coated griddles are generally very durable, unlike their Teflon counterparts. It's less unhealthy than Teflon and has great nonstick properties; their price tends to reflect this. So you get the benefits of Teflon but with the durability of cast iron. Cast iron, by contrast, is not known for its great non-stick properties, so you'll be doing a lot more scraping, over the years.
Q: Is cooking on a griddle healthy?
In a word, yes. You get the benefits of grease and fat oozing off the cooking surface, as you do with traditional outdoor grilling, but with the ease of a nonstick surface, as you would with a frying pan. So long as you get one which isn't a cheap, Teflon variety, and you regularly give it a good clean with a damp cloth and occasional dishwashing (with heat element removed), it should be about as healthy as possible, especially as you don't need to use much in the way of cooking oil, and you might do with other methods of cooking.
