"It doesn't sound like you're getting much use or value out of your freezer and that you aren't happy with something taking up room if it isn't being used."
You got that right! I bought a new mini-fridge shortly after writing the initial post, and after having lived without a freezer (I got a model with no freezer compartment) for a while now, I can't really say I've missed it much. Pretty much the only inconvenience I've noticed is that when I buy frozen fish fillets I have to eat them within a few days, as they don't keep well when defrosted, but other than maybe having to eat the same meal two days in a row, it's not much of a problem.
"The thought of having to go grocery shopping several times a week and cook every night whether I felt like it or not would make me very stressed"
I live a block away from a supermarket, so that's not really an issue for me. I'll walk past at least three different food stores on my way home from work every day anyway. And, even without the freezer, I only have to go shopping once or twice per week.
I do have to cook dinner every night though, but once I got the hang of it I realized it doesn't take that long at all. Cooking up a steak in a skillet and steaming some vegetables only takes about 10 minutes. Preparing a frozen microwave dinner takes about 5, so I only spend 5 more minutes making food now than what I did before, and the new way is much, much, healthier. :)
Also, I try to always keep some foods in the fridge that can be eaten without preparation, like hard boiled eggs, ham, cheese, smoked salmon, fresh vegetables, etc., so I don't *have* to cook if I'm not feeling like it.
This week I will be getting rid of my microwave oven, which I think I've only used a handful of times since I ditched the freezer.
Oh, and by the way, the vodka is still chill, even if it's just in the fridge and not in the freezer anymore. ;)
