Here's my favorite:
Live simply so that others may simply live.

I just wanted to add, that Socrates, is a character from The Way of the Peaceful Warrior book/movie, not the Greek philosopher :)

“The true cost of a thing is the amount of what I will call life which is required to be exchanged for it, immediately or in the long run.” - Thoreau
this one I like b/c it helps me remember that if I buy something new I am not paying for it merely in dollars.

"There are two ways of being happy: We must either diminish our wants or augment our means -- either may do -- the result is the same and it is for each man to decide for himself and to do that which happens to be easier." ~ Benjamin Franklin
I think the people here probably go for the former. I also feel that augmenting our menas ( beyond a point ) just means more things to posses you.

I've got a whole gdoc full of simple quotes I'd be happy to share. These are probably my 3 favorites:
Be content with what you have, rejoice in the way things are. When you realize there is nothing lacking, the whole world belongs to you.
- Lao Tzu
Smile, Breath, Go Slowly...
- Thich Naht Hanh
Beware of all enterprises that require new clothes...
- Henry David Thoreau
