This doesn't make much sense to me. Silicone works great for baking but as a double boiler? Unlike metal which conducts, silicone is heavy insulating material. Wouldn't you have to heat the water way past just boiling point to make this work? It seems like you'd lose a lot of heating control by switching to silicone. Since the whole point of using a double boiler is controlled, stable heat, you'd be taking a huge sacrifice for some collapsibility.

I just put chocolate chips in the microwave for 15-30 seconds at a time and stir--no burning, no boiling, no drama, just yummy meltedness.

just having a laugh as I come back from your 'nice sites' ... Paperclippy - its cute but so, so very cluttery! :)

I'm a bit suspicious about all this silicone stuff. Sticking with my stainless steel. There's also the aesthetic element - entirely absent from this object.

Enjoying the blog though!

I always just use a pan on low heat. Experts agree that this is a recipe for burning, but I just stir continuously and don't have a problem. I think the only thing I make that should be done with a double boiler is melting chocolate, though. I haven't tried making Hollandaise sauce or anything.

This could easily be used as a bowl, too, so I wouldn't say that it's a unitasker. Since it's collapsible, it also takes up a lot less space than a traditional bowl.

@Ben--I've had personal experience with pyrex bowls exploding and don't recommend using them in a double boiler situation. The stainless/aluminum bowls work fine, though, like you suggested.

This is clutter. Use a stainless or pyrex bowl on top of a pot.

You can also just use a stainless steel bowl. Alton Brown describes it. It needs to fit on your pan with a few inches to spare (for the water and clearance) and deep rather than shallow is better.

So - no clutter! Because the bowl and pan are separately useful.

Actually, Alton Brown says the only uni-tasker in your kitchen should be your fire extinguisher.

Matt--Feel welcome to drop some of those holiday cookies in the mail ... :)

I really like the idea of this. I'm wondering how well it will work in execution. I'm seeing that it would be great for melting chocolate. Interesting ...
